  1. Prepare 8 or 9 inch cake tin by spreading completely with butter and covering with baking sheet.

  1. Cream eggs and sugar a high speed until soft and doubled in volume. Add Chocolate extract / essence to it.

  1. Add the eggs one at a time and beat it together.
  2. Mix and sieve – Flour + Cocoa Powder.

6. Gradually add all the dry ingredients and fold it gently to the wet ingredients.

  1. Add the melted butter to the batter and fold it.

  1. Transfer it into the prepared tin and tap on the table to smoothen as well as to let out the bubbles.

  1. Bake for 35 mins.
  2. Test for the doneness with the skewer in the middle of the cake. If it is done, the skewer will come out clean.

Now, you can frost it …

  1. Remove the skin of the cake.
  2. Slice the cake  to form two layers.
  3. On a cake plate, place a little butter cream (to secure the cake in place) and place the first slice of cake.

4. Place a lavish amount of butter cream and spread it evenly followed by the next layer.

5. Cover the whole cake (top and sides) with blue tinted butter cream. This is called Crumb-Coating.

6. Prepare icing in 3 gradient shades of blue.

7.  Place large dots of each color and smear it with a spatula or back of a spoon.

8.  Alternate the colors from light to dark to give a wave effect.

9. Ombre’ effect is visible now.

10. Continue with the top of the cake.

11. Finish with a dot in the middle.

12. Chill it, slice and serve it.
